    A dry white wine with a chocolatey finish, It's hard to describe. But it's very good. It has a citrus back note/ aroma after sipping. Like a cadbury chocolate orange. But the top note and general profile is like a dry white, partway between chardonnay and Riesling.

    This is my favorite one that is savory, turns out this is from a Roman cookbook I don't have in my posession.

    Moratum:

    in a mortar, grind sesame, garlic, olive oil, onion, chickpeas... add garum, vinegar, salt, and parsley, cumin, herbs according to your preference.

    (this is basically 2000 years old hummus. Mutabal eggplant paste is also a type of moratum)

    tear fine wheat bread into chunks, soak it in milk, press out the excess lightly, fry it in olive oil until golden, drizzle with honey and black pepper or pipali (Romans would have used pipali, but black pepper will work)

    B is from Romania, 3rd century with later Byzantine Mosaics.
    3 is 6th century, Spain. Ruined during invasion by Ummayyad Ruler AbdurRahman III, rennovated under the Caliphate of Cordoba, Ruined again during the Reconquista, not used again.
