    Baked cauliflower, parsnips & carrots with quinoa & orange in a tahin-lemon-dressing. Topped with parsley (& in theory pumpkin seeds but I forgot them yesterday...).

    Another veggie-laden recipe post-Spain. It roughly follows the link, but instead if using orange juice for the dressing I add oranges to the salad. Made 4 portions, 3 for conference lunch during the week (trying to avoid the Dutch university cafeteria).

        @Frieke72 chilies may work! I kinda like that this particular dish does not have chiljes in it (I otherwise tend to cook rather spicy), but I can totally see it working with some. Cashes also could, but I'd be worried whether they are a bit too mild to shiny between all the strong taste.

          @vicgrinberg just a bit of flakes to enhance but so you can still taste the veggies. Cashews for the chew and proteins more than the taste 😊

              @Frieke72 ah, possible! But I'd rather up the quinoa in such a case, I think! It's chewy and has a nice nutty taste.

                @ePD5qRxX yes! Just a bit of it - it does enhance the sweetness of the veggies. I do think it would also work without, though, this whole recipe is rather forgiving to adaptation.
