Realizing I left out the alternate fat I was going to sub in for 1/4 of the butter. Oops.
Probably a minor impact, but a silly omission. I'll just call it a heart-healthy intentional exclusion.

@ottaross Hehe, a happy little accident. I wanted to mash some of the leftover pineapple and add it to the sponge, but it's still sitting in the fridge. Hub doesn't know though

The frozen cherries don't make up as bright red as the maraschino variety. But I'm happy with the result. I'm a bit too lazy to make the glaze suggested, though.

@ottaross I considered that, but this particular cake is so dependent on that layer of moisture that is the pineapple slices, so I just wait till next time to join in

@LillyHerself @ottaross a few years ago I made an upsidedown cake with blackberries we had picked from around the yard. Sooooo sweet but tasty. Looking back at the picture it wasn't really much of a looker either. Basically you cook your fruit of choice with some sugar and reduce then put that in the bottom of the pan.
