The frozen cherries don't make up as bright red as the maraschino variety. But I'm happy with the result. I'm a bit too lazy to make the glaze suggested, though.

@ottaross I considered that, but this particular cake is so dependent on that layer of moisture that is the pineapple slices, so I just wait till next time to join in

@LillyHerself @ottaross a few years ago I made an upsidedown cake with blackberries we had picked from around the yard. Sooooo sweet but tasty. Looking back at the picture it wasn't really much of a looker either. Basically you cook your fruit of choice with some sugar and reduce then put that in the bottom of the pan.
