            Paired with our sparkling matcha, a bevy of sweets from our friends at Itotatsu (いと達)...all hinting at the start of summer.

            Iwashimizu (岩清水) is a refreshing blue wave of jelly yōkan (羊羹) and chewy seppei (雪平 - a type of gyūhi mochi kneaded with egg whites and bean paste) over white bean paste.

              Rice planting season has begun and the green kinton 'aota' (青田) conjures to mind the lush fields during the summer months.

              Kinton (金団) are small balls of sweet bean paste covered in a colourful, shredded type of dough (commonly made from yam).

                  @camelliakyoto I was expecting a more explosive result, I'm glad for you that a mess didn't happen (maybe with more strongly carbonated water it would?).

                  Decent quality matcha was difficult to find over here for a few years. In those summers I mixed a cold drink from bad matcha, lime juice, vanilla, sugar, and cold water. Much better than throwing it away and having nothing!

                      'Hakusho' (薄暑) is a seasonal word that refers to those early summer days when you first begin to sweat in the warm weather.

                      Itotatsu's blue and white nerikiri is made from mugikogashi (麦こがし 'roasted barley flour'). The sweet is twisted into a lily bulb shape.
