Iwashimizu (岩清水) is a refreshing blue wave of jelly yōkan (羊羹) and chewy seppei (雪平 - a type of gyūhi mochi kneaded with egg whites and bean paste) over white bean paste.

@camelliakyoto I was expecting a more explosive result, I'm glad for you that a mess didn't happen (maybe with more strongly carbonated water it would?).
Decent quality matcha was difficult to find over here for a few years. In those summers I mixed a cold drink from bad matcha, lime juice, vanilla, sugar, and cold water. Much better than throwing it away and having nothing!

Monaka (最中) is a popular sweet in Japan, made by sandwiching bean paste between crisp wafers. The wafers themselves come in countless shapes and sizes.
Itotasu are well-known for their 'bear monaka' that change each season. For Mother's Day a carnation design on the belly!🧸
