David's easy black-bean burgers
(Makes 4 patties)
1 can black beans
1 egg (or vegan "egg" made with corn starch and a bit of the bean water)
panko or other bread crumbs
1 tbsp canola or vegetable oil
salt, pepper, and chilis to tasteMix all the ingredients together except for the breadcrumbs. Mash with a hand masher until most of the beans are a paste (it's okay still to have some whole beans in the patties). Stir in breadcrumbs until the mixture is thick enough to hold together. Divide into 4 balls, then flatten into patties.
Sear in a pan to help them hold together, them fry/bake/grill as you wish. Note that they'll be more crumbly with the vegan "egg".
This recipe (which I developed myself) uses stuff that you probably already have in your fridge and pantry. It takes only a few minutes to create the patties, so it's a nice easy last-minute vegetarian dinner. After searing, freeze any patties you don't use.
