We tried Borscht Kitchen restaurant for lunch today. Tiny spot, near College and Bathurst. Intriguingly, when you walk in, they ask if you want the sushi menu or the Ukrainian menu. A bit like going to the (now closed) Hungary Thai restaurant in Kensington market.
I had kvas to drink for the first time. Really liked it. It tasted a bit like beer and a bit like juice, and a bit like rootbeer. Looking it up, I see there's similarities with kombucha, but made with grain instead of tea.
The food was quite good. Reminds me of homemade. Few people eating in the restaurant, but a steady stream of delivery people coming in and out. Other patrons seemed to be speaking Ukrainian.
I enjoyed reading this profile of the owner, who came to Toronto in 2019 to study computer engineering. I didn't know Ukrainian sushi was a thing. But of course it is; restaurants continually adapt dishes to fit with available ingredients and local preferences.
