@storydragon I have some notebooks from the German novelty brand Nuuna. They use leather for the covers (but also have vegan notebooks), and have a lay-flat binding, so that if you put a book down open on its cover, the pages stay exactly where they are. I remember the detailed book binding lesson from my studies fondly, but it's quite a lost art nowadays (there still is a dedicated course for handwork in Den Haag if I remember correctly).
