But there is something about the tracks that I like, it kind of feels like someone else made them as they all came

I am looking for a piece of software to replicate this process that has a bit more control in recording.I am looking for a piece of software to replicate this process that has a bit more control in recording. I am doing this in real time moving sliders but the software does not let you record automation or have a timeline to capture gestures. There was an artist on X that I used to follow that produced stuff like this, kind of smearing of morphing visuals but no idea how to record these movements. Any advice on platforms or software that would replicate this type of stuff ?
