for email i've used geary before and it's alright . there's also merkuro mail if you prefer something qt based , but i generally find that gtk apps perform a bit better ( just a rule of thumb , not always true )
dino is probably your best bet for xmpp , it's not perfect but it's what i've found to be the most usable .
there's armcord for discord , for signal there's flare
there's pika backup , which is pretty nice
for the keyboard , you could try stevia instead of plasma-keyboard ? ( or maliit2 maybe ? ) there's also ways to get android keyboard working with atl but i haven't figured that out yet .
for bitwarden , there's not really a good option besides just like the browser extension for firefox .
there is a pinetime compatible app if that's what you mean , but there's not a generic gadgetbridge port , that is very much android specific .
for reminders , there's merkuro calendar if you prefer qt apps ! and for gtk , there's planify ( disclosure , i have not tried this one out personally )
there's not like , any good mobile optimized mobile editor for linux . onlyoffice is sorta the best it gets in this regard and it's still not great .

i have not tried nix home-manager yet since my phone isn't really powerful enough for it , but if u get it working i'd love to know lol

    hope this helps !
