I found the issue: I was working with the date data type, I put in 29/02 (or 30/02) and it would format in its own way regardeless of the applied formatting which every interface told me it was applied.

It did not like the data I was inputting which... is debatable.

I love how Libre Office Calc follows in the step of Excel... and does whatever the fuck it wants at random times in random places with no clear understanding of why.
