I've been using some of the Fossify apps, and the gallery app has image editing built in. I don't know if it's good enough compared to the Google one, but it's worth a try.
It's on FDroid and the regular Google store.

I think Immich only works with a server. And it provides only basic image editing. Cropping and some filters.

@limebar fossify gallery is a good gallery with a limited editor: crop, flip, scale, a dozen filter presets and finger graffiti. It's the best I've found.
