You need to subscribe to hashtags. The fediverse as I understand it has never been about individual followers or influencers. It's about topics and conversations. Those happen across hashtags. By subscribing to hashtags, your feed is full of the topics you love. You don't have to follow people to see what's happening in any field.
PS - the converse of this is always put hastags at the end of your posts. (Not in the middle, which messes up screen readers.)

A good trick is that when you find somebody whose posts you like, take a look at what people they follow (or boost). Chances are they're interesting to you as well.I know a form of following lists is coming. But I agree that the initial finding people is the most difficult part here. Once you have enough people, finding new people happens naturally through their boosts.

My experience has been that the more people you follow, the better your timeline is.
I found that the amount of fun I was having made a jump once I got over around 600 accounts.
I found a few people I liked at first, then followed who they followed. Then looked in that group's follows and repeated the same.
Then as people liked or boosted my posts. I would follow them and go thru their follows and add people found there.
It takes a bit of time.
