This is a *very* different (and a little problematic?) use of the word "hypervigilance" than the one I'm accustomed to. Maybe a different term is more appropriate?

Maybe? I think the OP is using "hypervigilance" to mean "heightened vigilance" rather than it's more common use as a psychological state that oppressed people find themselves in while living in societies intent on destroying them.

The supplement slingers I worked for hired local crews to build the shelving and do all the finish work and stocking and inventory when they opened a new store, hired from that pool.
We. Worked. HORD.
The last few 10-hour days were spent stocking and being trained to be afraid of neglecting any customer, so Robin walked around timing our responses to "feeling" you fuckers skulking. He chided the slow ones who might be on the ground reaching into a shelf, not jumping up fast enough. -

I don't think so, at least not in the context of how the OP is using it:
"what *actually* happens is the workforce pretends to be hypervigilant all the time ("i always check the output!")"
One could make the argument that employees who are fully aware that "AI" is harming their friends and colleagues cognitive abilities, and are being forced to use it and harm their own, are hypervigilant for reasons of ongoing moral injury, but I don't think that's what the OP is getting at.
