    Everybody Bakes the Same Cake is on for May 23-24!

    The February event was a surprise success. So by popular request, a quarterly event is the plan, with a cake bake for each season.

    Your mission, should you choose to accept it, is the retro, mid-century favourite: Pineapple Upside-down Cake.

    Here's a reference recipe for your consideration:

        The rules for EBTSC are basically just bake your version of the target cake this weekend (May 23-24).

        For alternatives, if you don’t want to use the skillet approach, the Guardian recipe and article is VERY good:

        @ottaross Well I now need to add pineapple rings and maybe cherries to my shopping list (I might have a can of tart cherries in the cabinet, I have to get up to check though). I haven't made one of these in like a decade at least, they are so good. Reducing the sugar might be a bit of a bear though...

          @SRLevine yes, some shopping required. I'm not sure if I'll use a fresh pineapple or try canned rings yet myself. A reduced sugar version is probably a good idea!

            We were thinking there might be some ppl who don't like pineapple, but hopefully they'll still give it a try and maybe mix it up a bit.

            I'll bet a version with bananas would be good. Could be like the "banofee" flavour resulting from the bottom caramelized layer.

            I don't know about using bananas, but in the 1970's some of us used canned peaches if we ran out of pineapple rings, and used pecan halves when the red dye in cherries was recalled and stores only had minty green (not good with pineapple, nuts to that). I should make yellow cake batter and do this this weekend!

                      @Piraya @ottaross Interesting alternative, could lead to some crossover if neurosurgeons get in on the baking. EBTSC here stands for Everyone Bakes The Same Cake 🙂

                          @aquasscum Oh you've got a treat coming! We had it fairly often when I was a kid. I haven't made it myself for years but now I'm going to have to. Pretty sure I have some tinned pineapple rings in the pantry, and I definitely have some frozen halved cherries in the freezer so it's all on. 😋

                                  @acroamatis lucky for you, the rules allow you to mess with the recipe and make it your own. 😆 I'm thinking someone should do a banana version. The bottom/topping could turn into a tasty "banofee" version.

                                      @colinburgess oh, didn't realize it was a long weekend in the US. That might help get extra participants who may have some enhanced spare time, or family around to help them.

                                      Last time I think there was one or two late-arrival versions. It was fun to see people enthusiastic to join in as they found the time.

                                          I bought a jar of cherries months ago with this in mind. Not quite the dayglo version I remember from Canada, but close enough for these purposes.
