so, I made a small mistake. I was using the peat pellets that were in small bags made of biodegradable corn starch, and thats what I thought I had bought.
However, the pellets I bought are made out of coconut fiber, which like peat bog, is EXTREMELY water absorbent, and good for nursing your seeds to germination. The only difference is that they didn't have the little baggies. which means transplanting them will be a little more challenging, but overall I should be fine.
Also, the tray is WAY heavier. this dirt took fucktons of water into it, and you'd never know.

there is a lot of unused real-estate here that I can use for starting other seeds. I'm just not sure what else I want to start at this point. More green beans and peas might be nice.

@Rayve33n I'm in 6a/6b up in Michigan. Its not uncommon to plant around this time around these parts. Memorial day is usually when its considered "safe" around here. Though next year, I might consider starting the seeds earlier than March.

@da_667 I'm in Georgia. I'm battling a drought and bugs so save my plants. Im sorting out how to plant in winter

stuffed tomatoes and stuffed cabbage leaves use more or less the same filling, if you want to switch up a bit. we cycle through all three pretty regularly.

@paul_ipv6 @da_667 i do like coring tiny tomatoes and putting those fresh-mozzerella snacky balls or lumps of fresh mozzerella in there with a dab of that basil from a tube and a dash of balsamic and eating them whole

@Viss I have a ton of bell peppers and chili peppers maturing in the planter right now. They're just now starting to develop secondary leaves, so I'm hopeful that they'll be ready to go outside soon.
