    started roasting up my bell peppers for the chili tonight. After that, I have to cook the ground turkey, then I can just dump all the shit into the dutch oven and let it simmer. The cooked dry beans are REALLY good, I can't wait for the whole meal to be done.

      if you haven't found rancho gordo beans yet, check out their web site. really good stuff.

      "the bean book" by steve sando and julia newberry is an excellent cookbook too.

        Heavily reduced sodium chili:

        Green bell peppers x 3 4mg sodium/ea, 25 calories each = 12mg , 75 cal
        ground turkey 170 cal, 90mg sodium x 4 = 360mg sodium, 680 cal
        no salt added tomato sauce 25 cal, 15mg sodium x 14 (2 cans)= 350 cal, 210mg sodium
        no salt added diced tomatoes 25 cal, 15 mg sodium x 7 (2 cans) = 175 cal, 105mg sodium
        frozen corn 80cal x 4: 360 cal
        small red beans, 3/4ths bag: 80 cal, 5 mg sodium per 1/4th cup x 13 = 780 cal, 48.5mg sodium
        low sodium v8 45 cal, 140mg sodium x 16oz = 90 cal, 280mg sodium
        at least 2 1/4th tsp of salt, pepper and garlic mix 180mg sodium x 2 = 360 mg sodium
        at least 2 1/4th teaspoons of seasoning salt (380mg x 2)
        at least 2 1/4th tsp of Cowboy chili = 130 mg sodium
        one 1/8th teaspoon of bavarian seasoning mix: 125mg sodium
        cumin powder, cayenne powder, garlic powder, chili powder, onion powder, pepper chorizo mix: 0 mg sodium

          @paul_ipv6 @da_667 quadruple recommend. I know it seems like there shouldn’t be that big a difference but there is and there’s so many delicious beans to choose from.

            soak your dry beans overnight. Boil soaked beans with bay leaves, garlic powder, onion powder, chili powder, cayenne powder, whatever seasonings you want. Boil until tender and water is heavily reduced (about 2 hours)

            place leftovers into freezer-safe container for re-use later.

            dice bellpeppers and roast in pan until tender. place bell peppers and beans into large cooking pot (pan, pot, dutch oven). Add v8, diced tomatoes, tomato sauce, and frozen corn. Corn does not need to be cooked beforehand.

            Cook ground turkey until done, keeping a close eye on it and chopping it extremely fine for the chili. Add spices to meat as desired. Drain. Recommend leaving ANY and ALL salt ingredients until ALL ingredients are in cooking pot

            Add ground meat to pot. Add salt-containing spices (seasoning salt, garlic/pepper/salt blend, cowboy chili, etc.) mix ingredients well, can simmer on stove top until done to preference, or can be placed in oven at ~350ish degrees, checking ever half hour until you deem it done.

              @da_667 Yum!!

              Or just throw all the ingredients in a crock-pot, turn it on "high" and let it go for a few hours. ( That's what I do..)

              You need to soak most dried beans for a few hours, but not lentils or split peas.

                      Goes well with corn bread, or with crushed up no salt added tortilla chips.

                        @jpm that's what I've heard as well, that once you get used to reduced salt meals, that overuse of salt becomes very pronounced.
