The Dutch comic book author Jan Kruis invented "Saint Pancake" (Sint Pannekoek) in the mid 1980s for his popular comic strip series Jan, Jans en de kinderen. He set the date as the 29th of November and declared it to be "traditionally" celebrated with a pancake dinner and optionally by wearing a pancake on your head.

@Natasha_Jay this is great - I love the hijinks found in London. (As a medical type, it took me quite a while to not call it St. Pancreas in my head.)
