However the bigger problem is that essential software for my day job is only available as x86 Windows binaries, they are not available for ARM Windows or Mac OS at all.

How good is Windows under a VM on the Mac?

But if you are only running SAP cpanels type crap and whatnot it probably won't matter.

I don't know if Winboat is available for macOS - iirc docker implementation on Mac is kinda dumb so maybe precludes?

The main tool is an x86-64 only Windows binary and there are some Windows tools that don't have any alternatives.

The Java alternative is nearly a complete alternative, but not as good or fast as the Windows binary, but sadly there are critical components that are Windows binary only.

I fear I've no option but to run SAP and associated tools in a Windows VM on Mac hardware...

I've never really used mac, but more of my development is on wsl anyway these days. I still "own" some old net framework apps that are windows only though so would need some way of developing those
